Taco Cupcakes

🧾 Ingredients

  • 1 lb (450 g) ground beef or ground chicken
  • 1 packet taco seasoning (or homemade: chili powder, cumin, paprika, garlic powder, onion powder, salt, pepper)
  • 12 large flour tortillas or taco shells (cut to fit cupcake tins)
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • Optional toppings: sour cream, chopped lettuce, diced tomatoes, sliced olives, guacamole

👩‍🍳 Instructions

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
  2. Cook meat: Brown the ground beef/chicken, drain fat, add taco seasoning and a splash of water; cook 2–3 minutes.
  3. Assemble cupcakes: Press tortilla circles into muffin cups, fill with meat, top with cheese.
  4. Bake 12–15 minutes until cheese melts and tortillas lightly crisp.
  5. Serve: Cool slightly, remove from tin, and top with desired garnishes.

⭐ Tip: Brush tortilla edges with oil for extra crispiness.


Grandpa Tom’s Grape Freezer Salad

A nostalgic, creamy, sweet-tart salad that’s chilled to perfection—ideal as a dessert or side dish.

🧾 Ingredients

  • 2 cups red seedless grapes, halved
  • 2 cups green seedless grapes, halved
  • 1 can (20 oz) crushed pineapple, drained
  • 1 cup mini marshmallows
  • 8 oz cream cheese, softened
  • 1 cup whipped topping (like Cool Whip)
  • ½ cup sugar (optional, depending on sweetness of fruit)
  • ½ tsp vanilla extract

👩‍🍳 Instructions

  1. Mix fruit: Combine grapes and pineapple in a large bowl.
  2. Make creamy base: Beat cream cheese with sugar and vanilla until smooth. Fold in whipped topping.
  3. Combine: Gently fold the fruit and mini marshmallows into the cream mixture.
  4. Freeze: Cover and chill for 3–4 hours (or overnight) until firm.
  5. Serve: Scoop like a dessert salad; can be garnished with extra grapes.

⭐ Tip: For an extra refreshing twist, add a few tablespoons of orange juice to the cream mixture.
