Ingredients (makes 4 mini meatloaves)

  • 500 g ground chicken
  • 1 cup breadcrumbs (or panko for extra lightness)
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic (minced)
  • 1 small onion (finely chopped)
  • 1 egg
  • ¼ cup milk
  • 2 tbsp chopped parsley (optional)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried oregano or Italian seasoning
  • ¼ cup shredded mozzarella (optional, for topping)

Garlic Parmesan Topping

  • 2 tbsp butter, melted
  • 2 tbsp grated Parmesan
  • 1 tsp garlic powder or 1 minced garlic clove

Instructions

1. Preheat Oven

  • Preheat to 180°C (350°F).
  • Grease a loaf pan or line a baking tray with parchment paper.

2. Mix Meatloaf

  1. In a bowl, combine ground chicken, breadcrumbs, Parmesan, garlic, onion, egg, milk, parsley, salt, pepper, and Italian seasoning.
  2. Mix gently until just combined — overmixing can make it tough.

3. Shape Loaves

  • Divide mixture into 4 mini loaves and place on the tray or in the pan.

4. Add Topping

  • Mix melted butter, Parmesan, and garlic for the topping.
  • Brush over the loaves.
  • Optionally sprinkle mozzarella for extra cheesy goodness.

5. Bake

  • Bake 25–30 minutes until internal temperature reaches 74°C (165°F) and the top is golden.

6. Serve

  • Serve warm with mashed potatoes, steamed vegetables, or a fresh salad.

  • Panko breadcrumbs make loaves lighter.
  • Make a large loaf instead of mini ones; bake 35–40 minutes.
