Ingredients (serves 2–3)

  • 1 lb (450 g) chicken breast or thighs, cut into bite-sized pieces
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp paprika (smoked or sweet)
  • 1/2 tsp onion powder
  • Salt and pepper, to taste
  • Optional: 1/2 tsp red pepper flakes for heat
  • 2 tbsp fresh parsley, chopped, for garnish
  • Optional: squeeze of lemon juice for brightness

Instructions

  1. Prep the chicken
    Pat chicken pieces dry with paper towels. Season with salt, pepper, paprika, and onion powder.
  2. Cook the chicken
    In a large skillet, melt 2 tbsp butter over medium-high heat.
    Add chicken in a single layer and cook 4–5 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. Make the garlic butter
    Reduce heat to medium. Add the remaining 1 tbsp butter and minced garlic (and red pepper flakes if using). Cook 1–2 minutes, stirring constantly, until fragrant. Be careful not to burn the garlic.
  4. Combine
    Return the chicken to the skillet. Toss to coat in the garlic butter sauce. Cook another 1–2 minutes so the flavors meld.
  5. Finish and serve
    Sprinkle with chopped parsley and optional lemon juice. Serve immediately.
