Coating
- 1½ cups all-purpose flour
- 1 tsp seasoned salt
For frying
- Vegetable or peanut oil
Instructions
- Parboil the ribs (key step)
- Cut ribs into individual pieces.
- Place in a pot, cover with water, add 1 tsp salt.
- Boil 30–40 minutes until ribs are tender but not falling apart.
- Drain well and let cool completely (very important).
- Season
- Toss ribs with seasoning mix until fully coated.
- Dredge
- Mix flour and seasoned salt.
- Coat ribs lightly in flour, shaking off excess.
- Heat oil
- Heat oil to 350°F / 175°C in a deep skillet or pot.
- Fry
- Fry ribs in batches for 6–8 minutes, turning until golden brown and crispy.
- Don’t overcrowd the pan.
- Drain & rest
- Drain on paper towels.
- Let rest 5 minutes before serving.
