Fried potatoes, onions, smoked sausage, and green beans

Ohhh yeah 😌 that’s real-deal comfort food. One skillet, big flavor, zero fuss.


Fried Potatoes, Onions, Smoked Sausage & Green Beans

Ingredients (serves 4)

  • 1 lb smoked sausage (kielbasa or andouille), sliced
  • 1½–2 lbs potatoes, diced or sliced (russet or Yukon gold)
  • 1 small–medium onion, sliced
  • 1–1½ cups green beans (fresh or frozen)
  • 3–4 tbsp oil or bacon grease (highly recommended 😏)
  • Salt & black pepper, to taste
  • ½ tsp paprika or garlic powder (optional)
  • Optional: red pepper flakes or a splash of hot sauce

Instructions

1. Par-cook the potatoes (important)

  • Boil diced potatoes in salted water 5–7 minutes until just barely tender.
  • Drain well. This helps them get crispy instead of soggy.

2. Brown the sausage

  • Heat 1 tbsp oil in a large skillet (cast iron is perfect) over medium-high heat.
  • Add sausage and cook until browned.
  • Remove and set aside.

3. Fry the potatoes

  • Add remaining oil to the skillet.
  • Spread potatoes in a single layer.
  • Let them cook undisturbed 4–5 minutes until golden.
  • Flip and continue frying another 5–7 minutes until crispy.

4. Add onions & green beans

  • Stir in onions and green beans.
  • Cook 5–7 minutes until onions are soft and beans are tender.
  • Season with salt, pepper, and optional spices.

5. Bring it all together

  • Add sausage back to the pan.
  • Toss everything together and cook 2–3 minutes to heat through.

Tips for the Best Skillet Meal

🔥 Don’t overcrowd the pan—crispy potatoes need space
🥔 Parboiling = crispy outside, fluffy inside
🧅 Add onions after potatoes start browning so they don’t burn
🌶️ A little heat takes this to another level


Serving Ideas

  • Perfect with cornbread or biscuits
  • Add a fried egg on top for breakfast-for-dinner vibes
  • Splash of vinegar or hot sauce right before serving = chef’s kiss
