Skillet Fried Potatoes, Onions, Smoked Sausage & Green Beans

Ingredients (Serves 4)

  • 4 medium potatoes, diced into 1/2-inch cubes
  • 1 medium onion, chopped
  • 2 tablespoons vegetable oil (or butter)
  • 12 oz smoked sausage, sliced into 1/2-inch rounds
  • 2 cups fresh or frozen green beans, trimmed (if frozen, thawed)
  • Salt & pepper, to taste
  • 1 teaspoon garlic powder or 2 cloves garlic, minced
  • Optional: smoked paprika, red pepper flakes, or fresh herbs for extra flavor

Instructions

  1. Cook potatoes
    • Heat oil in a large skillet over medium heat.
    • Add diced potatoes, season with salt and pepper.
    • Cover and cook 10–12 minutes, stirring occasionally, until potatoes are mostly tender.
  2. Add onions & sausage
    • Add chopped onions and smoked sausage slices to the skillet.
    • Cook 5–7 minutes, stirring occasionally, until onions are soft and sausage is browned.
  3. Add green beans
    • Stir in green beans and garlic (or garlic powder).
    • Cook 5–7 more minutes until beans are tender but still bright green.
    • Taste and adjust salt, pepper, or other seasonings.
  4. Serve
    • Serve hot straight from the skillet. Great as-is or with ketchup, hot sauce, or a fried egg on top.

🔥 Tips & Variations

  • Parboil potatoes for 5 minutes before frying to reduce cooking time and make them extra tender inside.
  • Swap smoked sausage for kielbasa, Andouille, or chicken sausage.
  • Add bell peppers or mushrooms for extra veggies.
  • For a crispier finish, remove lid during the last few minutes to let potatoes brown nicely.
