🥘 Fried Potatoes, Onions, and Sausage

A hearty, savory skillet dish with crispy potatoes, caramelized onions, and flavorful sausage—perfect for breakfast, brunch, or a comforting dinner. 🌭🥔🧅


🧾 Ingredients

  • 4 medium potatoes, peeled or scrubbed, diced into small cubes
  • 1 large onion, thinly sliced
  • 12 oz (340 g) sausage (kielbasa, Italian, or breakfast sausage), sliced
  • 2–3 tbsp olive oil or butter
  • Salt and black pepper to taste
  • ½ tsp smoked paprika or garlic powder (optional)
  • Fresh parsley for garnish (optional)

👩‍🍳 Instructions

1️⃣ Prep the potatoes

  • For crispier potatoes, parboil diced potatoes in salted water for 5 minutes, then drain.

2️⃣ Cook the sausage

  • Heat 1 tbsp oil in a large skillet over medium heat.
  • Add sausage slices and cook 5–7 minutes until browned. Remove and set aside.

3️⃣ Cook the onions

  • In the same skillet, add 1 tbsp oil if needed.
  • Sauté onions 5 minutes until soft and lightly caramelized.

4️⃣ Fry the potatoes

  • Add potatoes to the skillet with onions.
  • Season with salt, pepper, and optional paprika or garlic powder.
  • Cook 15–20 minutes, stirring occasionally, until potatoes are golden and tender.

5️⃣ Combine and serve

  • Return sausage to the skillet, stir everything together, and heat for 2–3 minutes.
  • Garnish with fresh parsley and serve hot.

🍽️ Tips & Variations

  • Add bell peppers or mushrooms for extra flavor and color.
  • Use spicy sausage for a kick. 🌶️
  • Sprinkle cheese over the skillet near the end for a cheesy variation. 🧀
  • For a breakfast twist, crack a few eggs on top and cover until set.
