Ingredients (Serves 4)

  • 4 medium potatoes, peeled and diced (about 1-inch cubes)
  • 1 large onion, sliced or diced
  • 1 lb (450 g) smoked sausage (like kielbasa or Andouille), sliced into ½-inch rounds
  • 3 tbsp vegetable oil or butter
  • 1 tsp paprika (optional)
  • ½ tsp garlic powder (optional)
  • Salt and black pepper, to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep the potatoes:
    • Wash, peel, and dice the potatoes into roughly 1-inch cubes. Pat dry with a paper towel (this helps them crisp up).
  2. Cook the sausage:
    • Heat 1 tbsp of oil in a large skillet over medium heat.
    • Add sausage slices and cook until browned on both sides, about 5 minutes. Remove and set aside.
  3. Cook the potatoes:
    • In the same skillet, add the remaining 2 tbsp oil.
    • Add potatoes and cook over medium heat for 15–20 minutes, stirring occasionally, until golden and almost tender.
  4. Add onions:
    • Stir in onions, paprika, garlic powder, salt, and pepper.
    • Cook another 5–7 minutes until onions are soft and potatoes are fully tender.
  5. Combine and finish:
    • Return the sausage to the skillet. Stir everything together and cook 2–3 more minutes to blend flavors.
  6. Serve:
    • Garnish with chopped parsley if desired. Serve hot as a main dish or hearty side.

💡 Tips for best results:

  • For extra crispiness, parboil potatoes for 5 minutes before frying.
  • Use a cast-iron skillet if you have one—potatoes get golden faster.
  • Add bell peppers or a dash of smoked paprika for extra flavor.
