Ingredients

For the Fried Fish

  • 4 fish fillets (catfish, tilapia, or cod)

Instructions

1. Prepare the potatoes

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with olive oil, salt, pepper, and paprika.
  3. Spread on a baking sheet and roast 25–30 minutes, flipping halfway, until golden and tender.

2. Cook the collard greens

  1. Heat olive oil or bacon drippings in a large skillet.
  2. Sauté onions and garlic until fragrant.
  3. Add collard greens, chicken broth, red pepper flakes, salt, and pepper.
  4. Cover and simmer 20–25 minutes until tender, stirring occasionally.

3. Fry the fish

  1. In a shallow bowl, pour buttermilk. In another bowl, mix flour, cornmeal, salt, pepper, paprika, and garlic powder.
  2. Dip fish fillets in buttermilk, then dredge in the flour mixture.
  3. Heat oil in a skillet over medium-high heat.
  4. Fry fish 3–4 minutes per side until golden brown and cooked through. Drain on paper towels.

4. Serve

  • Plate fried fish with roasted potatoes and collard greens.
  • Optional: serve with lemon wedges, tartar sauce, or hot sauce.
