Golden, crunchy, Southern comfort at its finest.

The vibe:

  • Mild catfish fillets
  • Cornmeal crust (that’s the key)
  • Hot oil + a squeeze of lemon
  • Served with hushpuppies, coleslaw, and hot sauce

Classic prep, no fuss:

  1. Soak fillets in buttermilk (or milk + hot sauce) 30 min.
  2. Dredge in cornmeal + flour + salt, pepper, paprika, cayenne.
  3. Fry at ~350°F until crispy and floating (3–4 min/side).
  4. Drain, hit with salt, eat immediately.

Pro moves:

  • Yellow cornmeal > white
  • Peanut oil if you have it
  • Don’t overcrowd the pan
  • Hot sauce on the fish, not just the side
