French Onion Soup

Ingredients

  • 4 large yellow onions, thinly sliced
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp sugar (optional, helps caramelize)
  • 2 cloves garlic, minced
  • 8 cups beef broth (low sodium)
  • ½ cup dry white wine (optional)
  • 1 tbsp Worcestershire sauce
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1 bay leaf
  • Salt & black pepper, to taste

Topping

  • Baguette slices, toasted
  • Gruyère or Swiss cheese, shredded

Instructions

  1. Caramelize the onions
    • Melt butter with olive oil in a large pot over medium-low heat.
    • Add onions and sugar.
    • Cook slowly, stirring often, 35–45 minutes, until deep golden brown.
  2. Build the soup
    • Add garlic and cook 30 seconds.
    • Deglaze with wine, scraping the bottom of the pot.
    • Stir in beef broth, Worcestershire sauce, thyme, and bay leaf.
    • Simmer uncovered 20–30 minutes.
  3. Season
    • Remove bay leaf.
    • Taste and adjust salt and pepper.
  4. Broil the topping
    • Ladle soup into oven-safe bowls.
    • Top with toasted baguette and generous cheese.
    • Broil 2–3 minutes until cheese is melted and bubbly.

Tips & Variations

  • Extra rich: Use half beef broth, half chicken broth
  • No wine: Skip it and add extra broth
  • Vegetarian: Use vegetable broth and omit Worcestershire
  • Deeper flavor: Add a splash of sherry at the end
