Here’s the classic, comforting Forgotten Chicken recipe — super easy and hands-off (you “forget” it in the oven while it cooks).
Forgotten Chicken
Serves: 4
Time: About 1 hour 15 minutes
Ingredients
- 4 boneless, skinless chicken breasts (or thighs)
- 1 cup uncooked long-grain white rice
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) cream of mushroom soup
- 1½ cups water
- 1 packet onion soup mix
Instructions
1️⃣ Preheat oven to 175°C (350°F).
2️⃣ Prepare the rice base
In a large baking dish, spread the uncooked rice evenly.
In a bowl, mix cream of chicken soup, cream of mushroom soup, and water until smooth.
Pour mixture over the rice.
3️⃣ Add chicken
Place chicken pieces on top of the rice mixture.
4️⃣ Season
Sprinkle the dry onion soup mix evenly over the chicken.
5️⃣ Cover tightly
Cover the dish tightly with aluminum foil (very important to keep moisture in).
6️⃣ Bake
Bake for 1 hour to 1 hour 15 minutes, until chicken is cooked through and rice is tender.
(Internal temperature should reach 75°C / 165°F.)
7️⃣ Serve
Let rest 5 minutes, then fluff the rice and serve.
Tips
- Make sure the dish is tightly sealed so the rice cooks properly.
- You can add sliced mushrooms or a handful of frozen peas before baking.
- For extra richness, replace water with chicken broth.
If you’d like, I can also give a healthier homemade (no canned soup) version made with a simple cream sauce from scratch.
