Crust

  • 1½ cups graham cracker crumbs
  • ¼ cup granulated sugar

  • 3 large eggs, separated

1️⃣ Prepare the Crust

  1. Preheat oven to 325°F (160°C).
  2. Mix graham cracker crumbs, sugar, and melted butter until evenly combined.
  3. Press into the bottom of a 9-inch springform pan. Bake 8–10 minutes, then let cool.

2️⃣ Make the Filling

  1. In a large bowl, beat cream cheese and sugar until smooth and creamy.
  2. Beat in egg yolks, vanilla, heavy cream, and lemon juice.

3️⃣ Whip Egg Whites

  1. In a separate bowl, beat egg whites (and cream of tartar if using) until stiff peaks form.
  2. Gently fold the whipped egg whites into the cream cheese mixture in batches, keeping it airy.

4️⃣ Bake

  1. Pour filling over the crust in the springform pan.
  2. Bake 50–60 minutes until edges are set and center slightly jiggles.
  3. Turn off oven, crack door, and let cheesecake cool in oven for 1 hour to prevent cracking.

5️⃣ Chill and Serve

  1. Refrigerate for at least 4 hours or overnight before serving.
  2. Remove from pan and garnish with berries, fruit compote, or whipped cream.
