🍳 Eggs Over Easy

Ingredients (Serves 1–2)

  • 2 large eggs
  • 1–2 tbsp butter or oil
  • Salt and black pepper
  • Optional: pinch of paprika or hot sauce

Instructions

  1. Heat the pan:
    Place a nonstick or well-seasoned skillet over medium-low heat. Add butter and let it melt gently (don’t brown it).
  2. Crack the eggs:
    Crack eggs into the pan. Cook undisturbed until the whites are set but the yolks are still runny (about 2–3 minutes).
  3. Flip carefully:
    Using a thin spatula, gently flip each egg. Cook another 20–40 seconds—just long enough to lightly set the top while keeping the yolk runny.
  4. Season & serve:
    Sprinkle with salt and pepper immediately after cooking.

🍞 Toast

  • Toast 2 slices of bread to your preferred level of crispness.
  • Spread with butter while hot so it melts in.
