Here’s a simple cucumber onion salad you can throw together in minutes, plus a couple easy twists.

Classic Cucumber Onion Salad

Ingredients

  • 2 cucumbers (English or Persian are best)
  • ½ medium red onion, thinly sliced
  • 2–3 tbsp white vinegar or apple cider vinegar
  • 1 tbsp olive oil (optional but nice)
  • Salt, to taste
  • Black pepper, to taste
  • Optional: pinch of sugar

How to make it

  1. Thinly slice the cucumbers (peel if you want, but not required).
  2. Slice the onion as thin as possible.
  3. Toss everything in a bowl with vinegar, olive oil, salt, pepper, and sugar if using.
  4. Let it sit for 10–20 minutes so the flavors mellow.
  5. Taste and adjust—more salt or vinegar if needed.

Easy Variations

  • Creamy version: Add 2–3 tbsp sour cream or Greek yogurt + a little dill.
  • Mediterranean vibe: Add chopped dill or parsley and a squeeze of lemon.
  • Spicy kick: A pinch of chili flakes or sliced jalapeño.
  • Extra crunch: Sprinkle in some celery or radishes.

This is perfect next to grilled meat, sandwiches, or honestly just eaten straight from the bowl standing at the fridge 😄
