Here’s a simple and hearty Crockpot Chicken and Potatoes recipe β€” perfect for an easy, hands-off meal πŸ—πŸ₯”.

Ingredients (serves 4)

  • 4 chicken thighs or breasts (bone-in or boneless)
  • 4–5 medium potatoes (cut into chunks)
  • 2 carrots (optional, sliced)
  • 1 small onion (chopped)
  • 3 cloves garlic (minced)
  • 1 tsp paprika
  • Β½ tsp black pepper
  • Β½ tsp salt (adjust to taste)
  • 1 tsp dried thyme or rosemary
  • 1 cup chicken broth
  • 2 tbsp olive oil or butter
  • Optional: fresh parsley for garnish

Instructions

1. Prepare the crockpot

  • Lightly grease the crockpot with olive oil or nonstick spray.

2. Layer ingredients

  1. Place potatoes, carrots, and onion at the bottom.
  2. Sprinkle with garlic, paprika, salt, pepper, and thyme/rosemary.
  3. Pour in chicken broth.
  4. Place chicken on top of the vegetables.

3. Cook

  • Cover and cook:
    • Low: 6–7 hours
    • High: 3–4 hours
  • Cook until chicken is fully cooked and potatoes are tender.

4. Serve

  • Spoon chicken and vegetables onto plates.
  • Pour over some of the cooking juices.
  • Garnish with fresh parsley.

πŸ’‘ Tips

  • For extra flavor, sear the chicken in a pan for 2–3 minutes per side before adding it to the crockpot.
  • Add green beans or peas in the last 30 minutes for a complete one-pot meal.
  • You can make a thicker sauce by stirring in 1–2 tbsp cornstarch mixed with water near the end of cooking.

I can also give a creamy crockpot version with cheese and cream if you want a richer comfort meal.

Do you want me to share that creamy version?
