Crockpot beef tips

Here’s a simple and delicious way to make Crockpot beef tips that are tender, savory, and perfect over rice, noodles, or mashed potatoes:


Ingredients:

  • 2 lbs beef stew meat (cut into bite-sized pieces)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup red wine (optional, can replace with more broth)
  • 1/4 cup soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt & pepper to taste
  • 2 tbsp cornstarch + 2 tbsp cold water (for thickening)
  • 1/2 cup sour cream (optional, for creamy version)

Instructions:

  1. Prep the beef:
    Season beef with salt, pepper, and paprika. Optional: Sear the beef in a hot skillet with a little oil for 2–3 minutes per side to enhance flavor, then transfer to the crockpot.
  2. Add aromatics & liquids:
    Place chopped onions and garlic in the crockpot. Add beef broth, soy sauce, Worcestershire sauce, thyme, and red wine (if using).
  3. Cook:
    Cover and cook on low for 6–8 hours or high for 3–4 hours until beef is tender.
  4. Thicken the sauce:
    About 30 minutes before serving, mix cornstarch with cold water to make a slurry. Stir into the crockpot to thicken the sauce. Let cook until desired consistency is reached.
  5. Optional creamy finish:
    Stir in sour cream just before serving for a creamy twist.
  6. Serve:
    Over rice, egg noodles, or mashed potatoes. Garnish with fresh parsley if desired.
