🐮 Crock Pot Cowboy Casserole

Ingredients

  • 1 lb (450 g) ground beef (or turkey)
  • 1 small onion, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup salsa (mild or medium)
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp garlic powder
  • Salt & pepper, to taste
  • Optional toppings: sour cream, green onions, tortilla chips

Instructions

1️⃣ Brown the meat

  • In a skillet, cook ground beef and onion until meat is browned and onions are soft. Drain excess fat.

2️⃣ Layer in crock pot

  • Add meat mixture, black beans, corn, diced tomatoes, salsa, chili powder, cumin, garlic powder, salt, and pepper.
  • Stir to combine.

3️⃣ Cook

  • Cover and cook on LOW 4–6 hours or HIGH 2–3 hours.

4️⃣ Add cheese

  • About 15 minutes before serving, sprinkle cheese on top and let it melt.

5️⃣ Serve

  • Optional: top with sour cream, green onions, or crushed tortilla chips.

  • Spicy kick: add diced jalapeños or cayenne
  • Make it Mexican-style: serve with tortillas or rice
  • Veggie boost: throw in bell peppers or zucchini
