Ingredients (serves 4)

  • 6–8 chicken thighs (bone-in or boneless, skin optional)
  • 1 onion, sliced
  • 3 cloves garlic, minced

  • 1 tsp dried thyme or rosemary
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

1. Prep the chicken

  • Pat chicken thighs dry and season with salt, pepper, paprika, and thyme.

2. Sear (optional, for extra flavor)

  • Heat olive oil in a skillet over medium-high heat.
  • Sear chicken thighs 2–3 minutes per side until golden brown.
  • This step is optional but adds more depth of flavor.

3. Layer in the crockpot

  • Place sliced onions and garlic at the bottom.
  • Add chicken thighs on top.
  • Pour chicken broth (and optional soy or Worcestershire sauce) over the chicken.

4. Cook

  • Cover and cook:
    • Low: 6–7 hours
    • High: 3–4 hours
  • Chicken should be tender and fully cooked (internal temperature 75°C / 165°F).

5. Serve

  • Serve chicken thighs with rice, mashed potatoes, or roasted vegetables.
  • Optional: use juices from the crockpot as a gravy.
