🍲 Crock Pot Beef Stroganoff
Ingredients
- 2 lbs beef stew meat or chuck, cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 3 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 1 tsp paprika
- Salt & black pepper
- 1 tbsp olive oil (optional, for browning)
To finish
- 1 cup sour cream
- 2 tbsp cornstarch + 2 tbsp water (optional, for thickening)
- Egg noodles or rice, cooked
Instructions
- (Optional but worth it) Brown the beef
Quickly sear beef in a hot skillet with oil for extra flavor. Transfer to crock pot. - Load the slow cooker
Add onion, garlic, mushrooms, broth, Worcestershire, Dijon, paprika, salt, and pepper. - Cook low & slow
- LOW: 7–8 hours
- HIGH: 4–5 hours
Beef should be super tender.
- Thicken (if needed)
Stir in cornstarch slurry during the last 20–30 minutes. - Make it creamy
Turn off heat and stir in sour cream at the end (prevents curdling). - Serve
