Ingredients (Serves 4)

  • 12 oz spaghetti
  • 2 tbsp olive oil or butter
  • 8 oz mushrooms, sliced (button or cremini)

  • 3 cups fresh spinach
  • 1 cup heavy cream (or half-and-half for lighter version)
  • 1/2 cup grated Parmesan cheese

Instructions

1️⃣ Cook the Pasta

  • Bring salted water to a boil.
  • Cook spaghetti until al dente according to package instructions.
  • Reserve 1/4 cup pasta water, then drain.

2️⃣ Sauté the Mushrooms

  • Heat olive oil or butter in a large skillet over medium heat.
  • Add sliced mushrooms and cook 5–7 minutes until browned and tender.
  • Add garlic and cook 30 seconds until fragrant.

3️⃣ Add Spinach

  • Stir in fresh spinach and cook until wilted (about 2 minutes).

4️⃣ Make the Cream Sauce

  • Pour in heavy cream and bring to a gentle simmer.
  • Stir in Parmesan cheese, salt, pepper, and red pepper flakes.
  • Simmer 3–5 minutes until slightly thickened.

5️⃣ Combine

  • Add cooked spaghetti to the skillet.
  • Toss to coat, adding reserved pasta water a little at a time to loosen the sauce if needed.
  • Cook together 1–2 minutes so flavors blend.

6️⃣ Serve

  • Garnish with extra Parmesan and cracked black pepper.
  • Serve immediately while creamy and hot.
