🥕 Creamy Carrot & Herb Spread
Bright, slightly sweet, and savory — perfect for crackers, sandwiches, wraps, or as a dip.
🛒 Ingredients (Makes about 1½ cups)
- 2 cups carrots, peeled & chopped
- 4 oz cream cheese (softened)
- 2 tbsp sour cream or Greek yogurt
- 1 tbsp olive oil
- 1–2 tbsp fresh herbs (parsley, dill, chives, or basil)
- 1 small garlic clove (optional)
- 1 tbsp lemon juice
- Salt & black pepper to taste
🔥 Instructions
1️⃣ Cook the carrots
Boil or steam carrots until very tender (10–15 minutes).
Drain and let cool slightly.
2️⃣ Blend
Add cooked carrots, cream cheese, sour cream, olive oil, herbs, garlic, and lemon juice to a food processor.
Blend until smooth and creamy.
3️⃣ Season
Add salt and pepper to taste.
If too thick, add 1–2 teaspoons water or olive oil.
4️⃣ Chill (optional)
Refrigerate 30–60 minutes for best flavor.
