Ingredients (Serves 4–6)

  • 4 cups corn (fresh, frozen, or canned — drained if canned)
  • 6 slices bacon, chopped
  • 2 tablespoons butter

  • 1 cup heavy cream (or half-and-half)
  • 1/2 cup milk

Instructions

1️⃣ Cook the bacon

  • In a large skillet over medium heat, cook chopped bacon until crispy.
  • Remove with a slotted spoon and set aside, leaving about 1–2 tablespoons of bacon grease in the pan.

2️⃣ Build the base

  • Add butter to the pan with the bacon grease.
  • Stir in garlic and cook for 30 seconds until fragrant.
  • Sprinkle in flour and whisk for about 1 minute to form a light roux.

3️⃣ Make it creamy

  • Slowly whisk in heavy cream and milk.

5️⃣ Finish

  • Stir most of the bacon back into the corn.
