Cranberry Chicken

Here’s a flavorful and easy Cranberry Chicken recipe — sweet, tangy, and perfect for a weeknight dinner.


🍗 Cranberry Chicken

Ingredients (Serves 4)

  • 4 boneless, skinless chicken breasts
  • Salt & black pepper, to taste
  • 1 tablespoon olive oil
  • 1/2 cup chicken broth
  • 1/2 cup whole berry cranberry sauce (fresh or canned)
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fresh thyme leaves (or 1/2 tsp dried)
  • Optional garnish: chopped fresh parsley

Instructions

1️⃣ Prepare the chicken

  • Season chicken breasts with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat.
  • Sear chicken 3–4 minutes per side until golden (not fully cooked). Remove and set aside.

2️⃣ Make the cranberry sauce

  • In the same skillet, add chicken broth, cranberry sauce, honey, Dijon mustard, and thyme.
  • Stir and cook 2–3 minutes until sauce begins to thicken.

3️⃣ Cook the chicken

  • Return chicken to the skillet, spooning sauce over the top.
  • Reduce heat to medium-low, cover, and simmer 8–10 minutes until chicken is cooked through (internal temp 165°F / 74°C).

4️⃣ Serve

  • Spoon sauce over chicken and garnish with parsley.
  • Serve with rice, mashed potatoes, or roasted vegetables.

Tips

  • Extra flavor: Add a splash of orange juice for a citrus twist.
  • Make it slow cooker style: Layer chicken in the slow cooker, pour sauce over, and cook on low 3–4 hours.
  • Cranberry alternatives: Fresh cranberries with a little sugar can be used instead of canned sauce.
