Here’s a hearty, comforting Country Smothered Chicken recipe — juicy chicken breasts or thighs simmered in rich, savory gravy with onions and mushrooms.


🍗 Country Smothered Chicken

Ingredients (Serves 4)

  • 4 boneless, skinless chicken breasts (or thighs)
  • Salt and black pepper, to taste
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 2–3 tbsp vegetable oil or butter

For the gravy:

  • 1 medium onion, sliced
  • 1 cup mushrooms, sliced (optional)
  • 2 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup milk or heavy cream
  • 1 tsp Dijon mustard (optional)
  • 1/2 tsp dried thyme or fresh sprigs
  • Salt & pepper, to taste

Instructions

1️⃣ Prepare & Sear Chicken

  • Season chicken with salt, pepper, paprika, and garlic powder.
  • Heat oil/butter in a large skillet over medium-high heat.
  • Sear chicken 3–4 minutes per side until golden (it will finish cooking in the gravy). Remove and set aside.

2️⃣ Make the Gravy

  • In the same skillet, sauté onions (and mushrooms if using) until softened, about 5–6 minutes.
  • Sprinkle flour over vegetables and stir to make a roux. Cook 1–2 minutes.
  • Slowly whisk in chicken broth and milk until smooth.
  • Stir in mustard and thyme, and simmer 3–5 minutes until thickened. Season with salt and pepper.

3️⃣ Smother the Chicken

  • Return chicken to the skillet, spooning gravy over the top.
  • Cover and simmer on low 10–15 minutes until chicken is cooked through (internal temp 165°F / 74°C).

4️⃣ Serve

  • Spoon extra gravy over chicken when plating.
  • Serve with mashed potatoes, rice, or buttered noodles.

Tips & Variations

  • Add carrots or bell peppers to the gravy for more veggies.
  • Use bone-in chicken for more flavor, adjusting cooking time.
  • For a richer gravy, substitute half the milk with cream.
