Cottage Cheese Pretzel Bites

Ingredients (makes ~20–25 bites)

  • 1 cup cottage cheese (full-fat or low-fat)
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 egg
  • 2 tbsp melted butter
  • Optional toppings: coarse salt, garlic powder, shredded Parmesan

Instructions

1. Make the dough

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine cottage cheese, egg, and melted butter. Mix until smooth.
  3. In another bowl, whisk together flour, baking powder, and salt.
  4. Gradually add dry ingredients to wet, mixing until a soft dough forms.

2. Shape the pretzel bites

  1. Lightly flour your work surface.
  2. Divide dough into small pieces (about 1–2 tbsp each).
  3. Roll each piece into a short rope (~4–5 inches), then shape into small pretzel bites or mini knots.
  4. Place on a parchment-lined baking sheet.

3. Bake

  1. Optional: brush bites with a little water or beaten egg for shine.
  2. Sprinkle with coarse salt, garlic powder, or Parmesan if desired.
  3. Bake 12–15 minutes, until golden brown.

4. Serve

  • Enjoy warm with mustard, cheese dip, or your favorite sauce.

Tips

  • Extra soft: Don’t overbake; cottage cheese keeps them moist.
  • Flavor variations: Mix in herbs (rosemary, thyme) or shredded cheddar into the dough.
  • Quick version: Shape bites without rolling into ropes—they still bake well.
