Ingredients

For the Cake:

  • 1¾ cups all-purpose flour
  • 1¾ cups sugar
  • ¾ cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1½ tsp baking soda

  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

For the Frosting (optional):

  • ½ cup unsalted butter, softened

  • 3 cups powdered sugar
  • 1/3 cup milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven:
    • 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix dry ingredients:
    • In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add wet ingredients:
    • Stir in eggs, milk, oil, and vanilla until smooth.
  4. Add boiling water:
    • Slowly mix in boiling water. Batter will be thin—this makes the cake moist.
  5. Bake:
    • Divide batter evenly between pans.
    • Bake 30–35 minutes, or until a toothpick comes out clean.
    • Cool 10 minutes in pans, then remove to wire racks.
  6. Make frosting (optional):
    • Beat butter until creamy. Add cocoa powder, powdered sugar, milk, and vanilla. Beat until smooth.
  7. Assemble:
    • Frost between layers, on top, and around the sides.

Tips

  • For extra richness, add 1 tsp espresso powder to the batter.
  • Use buttermilk instead of milk for a slightly tangy flavor.
  • Decorate with chocolate shavings or fresh berries for a beautiful presentation.
