Chicken with mashed potatoes

Chicken with Mashed Potatoes (Comfort-Style)

The Chicken (Pan-Seared + Gravy)

Ingredients

  • 4 bone-in or boneless chicken thighs (breasts work too)
  • Salt & black pepper
  • 1 tsp paprika
  • ½ tsp garlic powder
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 cup chicken broth
  • Optional: splash of cream or milk

Instructions

  1. Pat chicken dry. Season both sides with salt, pepper, paprika, and garlic powder.
  2. Heat oil in a skillet over medium-high. Add chicken and sear 5–6 min per side until golden and cooked through. Remove and keep warm.
  3. Lower heat. Add butter to pan, then broth. Scrape up browned bits.
  4. Simmer 3–5 minutes to reduce slightly. Add a splash of cream if you like it richer.
  5. Return chicken to pan, spoon gravy over top.

The Mashed Potatoes (Creamy & Buttery)

Ingredients

  • 2 lbs russet or Yukon gold potatoes, peeled & cubed
  • Salt
  • 4 tbsp butter
  • ½–¾ cup warm milk or cream
  • Black pepper

Instructions

  1. Boil potatoes in well-salted water until fork-tender (15–20 min). Drain.
  2. Mash with butter, then slowly add warm milk until creamy.
  3. Season with salt and pepper to taste.

How to Serve It

  • Spoon gravy over chicken and potatoes (important)
  • Add a simple veg: green beans, peas, or corn
  • Finish with chopped parsley or cracked pepper

Easy upgrades

  • Southern style: use fried chicken + mashed potatoes + white gravy
  • Garlic mash: add roasted garlic to potatoes
  • Herby chicken: thyme or rosemary in the pan
  • Extra cozy: serve with biscuits or dinner rolls
