🌮🍲 Chicken Tortilla Soup

⏱️ Time

  • Cook: 30 minutes

🛒 Ingredients

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp paprika
  • Salt & pepper to taste
  • 1 can (10 oz) diced tomatoes with green chiles (Rotel)
  • 1 can (15 oz) black beans, drained & rinsed
  • 1 cup corn (frozen or canned)
  • 4 cups chicken broth
  • 2 cups cooked shredded chicken (rotisserie works great)
  • Juice of 1 lime

Toppings

  • Crushed tortilla chips or tortilla strips
  • Shredded cheese
  • Sour cream
  • Avocado
  • Fresh cilantro

🔥 Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Sauté onion and bell pepper 3–4 minutes until softened.
  3. Add garlic, chili powder, cumin, paprika, salt, and pepper; cook 30 seconds.
  4. Stir in tomatoes, black beans, corn, and chicken broth.
  5. Bring to a simmer and cook 15 minutes.
  6. Add shredded chicken and simmer another 5–10 minutes.
  7. Stir in lime juice, taste, and adjust seasoning.

🌟 Variations

  • Creamy: Add ½ cup heavy cream or cream cheese.
  • Spicy: Add jalapeños or hot sauce.
  • Slow cooker: Dump everything in (except lime & toppings) and cook low 6–7 hrs.
  • Low carb: Skip beans and corn, add extra chicken.
