🛒 Ingredients (Serves 4)

  • 4–6 bone-in or boneless chicken thighs
  • Salt & pepper, to taste
  • 2 tbsp olive oil or butter
  • 1 small onion, finely chopped

🔥 Instructions

1️⃣ Season & sear chicken

  • Season chicken thighs with salt and pepper.

  • Add Parmesan cheese and thyme/rosemary.
  • Simmer 3–5 minutes until slightly thickened.

4️⃣ Return chicken

  • Add chicken thighs back to the skillet.
  • Cover and simmer 15–20 minutes, or until chicken is fully cooked (internal temp 165°F / 74°C).

5️⃣ Optional extras

  • Add mushrooms, spinach, or sun-dried tomatoes in the last 5 minutes of cooking.

6️⃣ Serve

  • Spoon sauce over chicken and serve with rice, pasta, or mashed potatoes.
