Chicken Sopas

Ahh Chicken Sopas 🥣💛—pure comfort food, Filipino-style. Creamy, cozy, and perfect when you want something warm and filling.

Chicken Sopas (Filipino Chicken Macaroni Soup)

Ingredients

  • 2 tbsp oil or butter
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 500 g chicken (bone-in pieces or shredded cooked chicken)
  • 6 cups water or chicken broth
  • 1 cup elbow macaroni
  • 1 cup evaporated milk
  • 1 medium carrot, diced
  • ½ cup cabbage, chopped
  • Salt and pepper to taste

Optional but classic:

  • 1 hotdog or ham, sliced
  • 1 stalk celery
  • Fish sauce (patis) to taste

Instructions

  1. Sauté aromatics
    Heat oil/butter. Sauté onion until soft, add garlic until fragrant.
  2. Cook the chicken
    Add chicken, season with salt/pepper. Cook until lightly browned.
  3. Simmer
    Pour in water or broth. Simmer until chicken is tender.
    Remove chicken, shred it, then return to pot.
  4. Add macaroni & veggies
    Add macaroni and carrots. Simmer until pasta is tender.
  5. Make it creamy
    Lower heat. Add evaporated milk and cabbage.
    Simmer gently 2–3 minutes (don’t boil hard).
  6. Season & serve
    Adjust salt, pepper, or add a little patis for depth.

Tips for extra good sopas

  • Use bone-in chicken for richer flavor
  • Add milk slowly on low heat so it doesn’t curdle
  • Thicker sopas? Let it rest 5–10 minutes before serving

Serve with

  • Pandesal or toasted bread 🥖
  • Extra pepper on top
  • A drizzle of butter if you’re feeling indulgent 😌
