Chicken quesadilla

Here’s a quick and tasty Chicken Quesadilla recipe — crispy, cheesy, and perfect for lunch or dinner 🌮🧀


Chicken Quesadilla

Serves: 2–3
Time: ~20 minutes


Ingredients

  • 2 large flour tortillas
  • 1 cup cooked chicken, shredded or diced
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • ½ small onion, thinly sliced (optional)
  • ½ bell pepper, thinly sliced (optional)
  • 1 tsp olive oil or butter
  • Optional toppings: sour cream, salsa, guacamole, chopped cilantro

Instructions

1️⃣ Prepare the Filling

  • In a skillet, heat olive oil over medium heat.
  • Sauté onion and bell pepper 2–3 minutes until softened (optional).
  • Add chicken to warm through.

2️⃣ Assemble the Quesadilla

  • Place a tortilla in a clean skillet over medium heat.
  • Sprinkle half of the cheese evenly over the tortilla.
  • Add chicken (and vegetables, if using) on top of the cheese.
  • Sprinkle remaining cheese on top and cover with the second tortilla.

3️⃣ Cook

  • Cook 3–4 minutes until the bottom tortilla is golden brown.
  • Carefully flip with a spatula and cook another 3–4 minutes until the other side is golden and cheese is melted.

4️⃣ Serve

  • Remove from skillet and let rest 1 minute.
  • Cut into wedges and serve with sour cream, salsa, or guacamole.

Tips & Variations

  • Add spices to the chicken: chili powder, cumin, paprika, or taco seasoning for extra flavor.
  • For a lighter version, use a whole wheat tortilla and less cheese.
  • Mix in beans, corn, or spinach for extra texture and nutrition.
