Classic Chicken Noodle Soup

Ingredients:

  • 1 tbsp olive oil or butter
  • 1 medium onion, diced
  • 2 carrots, sliced

  • 6–8 cups chicken broth
  • 1 lb (450 g) chicken (breast or thighs)
  • 1 bay leaf

  • 1–1Β½ cups egg noodles
  • Fresh parsley or dill (optional)

Instructions:

  1. Build the base
    Heat oil in a large pot over medium heat. Add onion, carrots, and celery. Cook 5–7 minutes until softened. Add garlic and cook 30 seconds.
  2. Simmer
    Add chicken broth, chicken, bay leaf, thyme, salt, and pepper. Bring to a gentle boil, then reduce to a simmer. Cook 15–20 minutes until chicken is cooked through.
  3. Shred the chicken
    Remove chicken, shred with two forks, and return it to the pot.
  4. Add noodles
    Stir in egg noodles and cook 6–8 minutes until tender.
  5. Finish & serve
    Remove bay leaf. Taste and adjust seasoning. Garnish with parsley or dill.
