Chicken Marsala 🍗🍄

Chicken Marsala is a classic Italian-American dish featuring pan-seared chicken breasts in a rich mushroom and Marsala wine sauce. It’s elegant, flavorful, and surprisingly easy to make at home.


Ingredients

  • 4 chicken breasts, thinly pounded
  • Salt and black pepper to taste
  • ½ cup all-purpose flour (for dredging)
  • 3 tbsp olive oil or butter
  • 8 oz mushrooms, sliced
  • ¾ cup Marsala wine
  • ½ cup chicken broth
  • 2 tbsp butter (optional, for finishing)
  • 2 cloves garlic, minced
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the chicken
    Season chicken with salt and pepper. Dredge lightly in flour, shaking off excess.
  2. Cook the chicken
    Heat olive oil in a skillet over medium-high heat. Cook chicken 3–4 minutes per side until golden and cooked through. Remove from skillet and set aside.
  3. Cook the mushrooms
    In the same skillet, sauté mushrooms and garlic until softened and lightly browned.
  4. Make the sauce
    Pour in Marsala wine and chicken broth, scraping up browned bits from the pan. Simmer 5–7 minutes until slightly thickened.
  5. Finish the dish
    Return chicken to the pan and spoon sauce over the top. Stir in butter for extra richness if desired.
  6. Serve
    Garnish with chopped parsley and serve hot.

  • With steamed green beans or asparagus
  • Pair with crusty bread to soak up the sauce

💡 Tip:

  • For a lighter version, substitute half the Marsala wine with chicken broth.
  • Pounding the chicken to even thickness ensures quick, even cooking.
