Here’s a simple, soothing chicken and rice soup—perfect when you want something warm and filling.
🍲 Chicken and Rice Soup
Ingredients
- 1 tbsp olive oil or butter
- 1 small onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 cup cooked chicken, shredded (rotisserie works great)
- ½ cup white rice (or brown—see note)
- 1 tsp salt (to taste)
- ½ tsp black pepper
- ½ tsp dried thyme or Italian seasoning
- Optional: bay leaf, fresh parsley, lemon juice
Instructions
- Heat oil or butter in a pot over medium heat.
- Add onion, carrots, and celery. Cook 4–5 minutes until soft.
- Add garlic and cook 30 seconds.
- Pour in broth and add rice, salt, pepper, herbs, and bay leaf if using.
- Bring to a boil, then reduce heat and simmer 15–18 minutes (until rice is tender).
- Stir in chicken and simmer 5 more minutes.
- Taste and adjust seasoning. Remove bay leaf.
- Finish with parsley or a squeeze of lemon.

- Brown rice: Simmer rice first 30–35 minutes, then add chicken
