Chicken and rice soup

Here’s a simple, soothing chicken and rice soup—perfect when you want something warm and filling.


🍲 Chicken and Rice Soup

Ingredients

  • 1 tbsp olive oil or butter
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup cooked chicken, shredded (rotisserie works great)
  • ½ cup white rice (or brown—see note)
  • 1 tsp salt (to taste)
  • ½ tsp black pepper
  • ½ tsp dried thyme or Italian seasoning
  • Optional: bay leaf, fresh parsley, lemon juice

Instructions

  1. Heat oil or butter in a pot over medium heat.
  2. Add onion, carrots, and celery. Cook 4–5 minutes until soft.
  3. Add garlic and cook 30 seconds.
  4. Pour in broth and add rice, salt, pepper, herbs, and bay leaf if using.
  5. Bring to a boil, then reduce heat and simmer 15–18 minutes (until rice is tender).
  6. Stir in chicken and simmer 5 more minutes.
  7. Taste and adjust seasoning. Remove bay leaf.
  8. Finish with parsley or a squeeze of lemon.

🔥 Tips & Variations

  • Creamy version: Add ½ cup cream or milk at the end
  • Extra hearty: Add potatoes or more veggies
  • Brown rice: Simmer rice first 30–35 minutes, then add chicken
  • Make-ahead tip: Cook rice separately so it doesn’t soak up all the broth
