Ingredients:

  • 1 cup grated vegetables (carrot, zucchini, potato, capsicum—mix anything you like)
  • ½ cup grated cheese (cheddar or mozzarella)
  • 1 small onion (finely chopped)
  • 1 egg
  • 3–4 tbsp flour (or chickpea flour/besan)
  • 1–2 tbsp cornflour (for crispiness)
  • 1 tsp garlic (minced or paste)
  • ½ tsp black pepper
  • ½–1 tsp chili flakes (optional)
  • Salt (to taste)
  • Fresh herbs (coriander or parsley)
  • Oil (for shallow frying)

  1. Prep veggies:
    • If using watery veggies like zucchini or potato, squeeze out excess moisture (important for crisp fritters).
  2. Mix:
    • In a bowl, combine veggies, cheese, onion, egg, flour, cornflour, garlic, and spices.
    • Mix until it forms a thick batter (not too runny).
  3. Heat pan:
    • Add a little oil on medium heat.
  4. Cook:
    • Drop spoonfuls of mixture and flatten slightly.
    • Cook 3–4 minutes per side until golden and crispy.
  5. Serve:
    • Remove and place on paper towels.
