Cheesy Chicken Fritters

Ingredients

  • 2 cups cooked chicken, finely chopped or shredded
    (rotisserie chicken works great)
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 large eggs
  • ⅓ cup all-purpose flour
  • 2 green onions, sliced (optional)
  • 2 cloves garlic, minced
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2–3 tbsp oil for frying

Instructions

  1. Mix the batter
    • In a large bowl, combine chicken, cheese, eggs, flour, green onions, garlic, paprika, salt, and pepper.
    • Stir until everything is well combined.
  2. Heat the pan
    • Heat oil in a large skillet over medium heat.
  3. Cook the fritters
    • Drop heaping tablespoons of the mixture into the pan.
    • Gently flatten with a spatula.
    • Cook 3–4 minutes per side until golden brown and cooked through.
  4. Drain & serve
    • Remove and drain on paper towels.
    • Serve hot.

Serving Ideas

  • Dip in ranch, garlic aioli, sour cream, or honey mustard
  • Serve with a fresh salad or roasted veggies
  • Tuck into a wrap or slider bun

  • Extra crispy: Use panko instead of flour
