A Cheesecake Cake is creamy, no-bake, and perfect for make-ahead desserts.


🍰 Cheesecake Icebox Cake (No-Bake)

Ingredients (8–10 servings)

  • 2 cups heavy whipping cream
  • 1 cup powdered sugar
  • 2 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1 box graham crackers
  • Optional toppings: fresh berries, cherry pie filling, chocolate drizzle, caramel sauce

Instructions

  1. Whip the cream
    • Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
  2. Make cheesecake layer
    • In a separate bowl, beat cream cheese until smooth.
    • Gently fold in the whipped cream until light and fluffy.
  3. Assemble the cake
    • In an 8×8 or 9×13 dish, spread a thin layer of cheesecake mixture.
    • Add a single layer of graham crackers (break to fit).
    • Spread cheesecake mixture over crackers.
    • Repeat layers, ending with cheesecake on top.
  4. Chill
    • Cover and refrigerate at least 6 hours, preferably overnight.
  5. Serve
    • Add toppings just before serving.
    • Slice and enjoy—no oven, no stress.

🔥 Flavor Variations

  • Strawberry Cheesecake: Add sliced strawberries between layers
  • Chocolate Cheesecake: Use chocolate graham crackers + chocolate drizzle
  • Lemon Cheesecake: Add 2 tbsp lemon juice + zest to the cream mixture
  • Peanut Butter Cheesecake: Swirl in ½ cup peanut butter
