Canadian Cheese Soup

Ingredients (Serves 4–6)

  • 4 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 3 cups chicken or vegetable broth
  • 1 cup milk
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese (sharp or medium)
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 small potato, peeled and diced
  • 1/2 teaspoon mustard powder (optional)
  • Salt & pepper, to taste
  • Optional garnish: chopped green onions or parsley

Instructions

  1. Cook the veggies
    • In a large pot, melt butter over medium heat.
    • Add onion, garlic, carrots, celery, and potato. Sauté 5–7 minutes until slightly softened.
  2. Make the roux
    • Sprinkle flour over the vegetables and cook 1–2 minutes, stirring constantly.
  3. Add liquids
    • Slowly whisk in broth, then milk and cream. Bring to a gentle simmer, stirring until thickened slightly.
  4. Add cheese
    • Reduce heat to low. Gradually add shredded cheddar, stirring until melted and smooth.
  5. Season
    • Add mustard powder if using. Season with salt and pepper to taste.
  6. Serve
    • Ladle into bowls and garnish with green onions or parsley. Serve with crusty bread or crackers.

  • For a smoother soup, blend slightly with an immersion blender before adding cheese.
  • Add cooked bacon or ham for extra flavor.
  • Use a mix of cheeses (cheddar + Gruyère or smoked cheddar) for a deeper flavor.
  • For a thicker soup, add 1 more tablespoon flour when making the roux.
