Cabbage wedges

Cabbage wedges are a simple, healthy side dish made by cutting cabbage into wedges and roasting, grilling, or baking them until tender with crispy edges.


Ingredients (serves 4)

  • 1 medium head green cabbage
  • 2–3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: garlic powder, paprika, or lemon juice

Instructions

1. Preheat the oven

  • Preheat oven to 400°F (200°C).

2. Cut the cabbage

  • Remove any damaged outer leaves.
  • Cut the cabbage into 6–8 wedges, keeping the core intact so the wedges hold together.

3. Season

  • Place wedges on a baking sheet.
  • Brush or drizzle with olive oil.
  • Sprinkle with salt, pepper, and optional seasonings.

4. Roast

  • Roast for 25–30 minutes, turning once halfway through.
  • The edges should be browned and slightly crispy while the inside becomes tender.

5. Serve

  • Serve warm. You can add a squeeze of lemon juice or a drizzle of balsamic vinegar for extra flavor.

  • Sprinkle Parmesan cheese on top before roasting for extra flavor.
  • Add butter and garlic for a richer taste.
