🥬 Cabbage Soup

Cabbage soup is a hearty, healthy, and comforting dish. It’s light yet filling, often made with vegetables, broth, and optional meat for flavor. It’s perfect for a low-calorie or detox meal.


📝 Classic Cabbage Soup Recipe (Serves 4–6)

Ingredients

  • 1 small head green cabbage, chopped
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1 can (14 oz / 400 g) diced tomatoes
  • 6 cups (1.4 L) vegetable or chicken broth
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp paprika (optional)
  • 1–2 bay leaves
  • 1 tbsp olive oil
  • Optional: 1 lb (450 g) ground beef, sausage, or chicken

👩‍🍳 Instructions

1️⃣ Prep Ingredients

  • Chop all vegetables into bite-sized pieces.
  • If using meat, brown it in a large pot with olive oil and set aside.

2️⃣ Sauté Aromatics

  • In a large pot, heat olive oil over medium heat.
  • Sauté onion, garlic, carrots, and celery 3–5 minutes until softened.

3️⃣ Add Cabbage & Liquid

  • Stir in chopped cabbage and cook 2–3 minutes.
  • Add diced tomatoes, broth, bay leaves, salt, pepper, and paprika.

4️⃣ Simmer

  • Bring to a boil, then reduce heat and simmer 25–30 minutes until vegetables are tender.
  • If using browned meat, stir it back in during simmering.

5️⃣ Adjust Seasoning

  • Taste and add more salt, pepper, or herbs as needed.
  • Remove bay leaves before serving.

🔥 Tips

  • Add a splash of vinegar or lemon juice for brightness.
  • For extra flavor, sauté vegetables in bacon fat or add smoked sausage.
  • Can be blended for a smooth cabbage soup.
  • Freezes well for meal prep.

🍽️ Serving Ideas

  • Serve with crusty bread or garlic toast.
  • Top with grated Parmesan or fresh herbs.
  • Pair with a light salad for a complete meal.
