🥬 Classic Cabbage Soup

Ingredients (6–8 servings)

  • 1 medium head green cabbage, chopped
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 6 cups chicken or vegetable broth
  • 1 tbsp olive oil or butter
  • 1 tsp paprika
  • ½ tsp dried thyme
  • 1 bay leaf
  • Salt & black pepper, to taste

Optional add-ins:

  • 1 lb smoked sausage or ground beef
  • Potatoes, green beans, or corn
  • Red pepper flakes for heat

Instructions

  1. Sauté aromatics
    • Heat oil in a large pot over medium heat.
    • Cook onion, carrots, and celery 5–7 minutes until softened.
    • Add garlic and cook 30 seconds.
  2. Build the soup
    • Stir in diced tomatoes, broth, paprika, thyme, bay leaf, salt, and pepper.
    • Bring to a gentle boil.
  3. Add cabbage
    • Stir in cabbage (it will look like a lot—trust the process).
    • Reduce heat and simmer 25–30 minutes until cabbage is tender.
  4. Finish & serve
    • Remove bay leaf.
    • Taste and adjust seasoning.
