🫐 Blueberry Cream Cheese Bread (Loaf, Serves ~8)

Ingredients

For the bread batter

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup granulated sugar
  • 2 large eggs
  • ½ cup vegetable oil or melted butter
  • ½ cup sour cream or plain yogurt
  • 1 tsp vanilla extract
  • 1–1¼ cups fresh or frozen blueberries (do not thaw if frozen)

For the cream cheese filling

  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract

Optional topping

  • 2 tbsp coarse sugar for sprinkling

Instructions

1️⃣ Preheat oven

  • Oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper for easier removal.

2️⃣ Make cream cheese filling

  • In a small bowl, beat cream cheese with sugar and vanilla until smooth. Set aside.

3️⃣ Prepare bread batter

  • In a medium bowl, whisk flour, baking powder, baking soda, and salt.
  • In a large bowl, beat eggs, sugar, oil, sour cream, and vanilla until smooth.
  • Gently fold dry ingredients into wet until just combined.
  • Fold in blueberries carefully (to avoid crushing them).

4️⃣ Layer the batter

  • Spoon half the bread batter into the loaf pan.
  • Spread cream cheese filling over the center.
  • Top with remaining batter. Smooth the top.
  • Optional: sprinkle coarse sugar on top for a slight crunch.

5️⃣ Bake

  • Bake 50–60 minutes, until a toothpick inserted in the center comes out clean (a few crumbs are okay, just avoid cream cheese).
  • Let cool 10 minutes in pan, then remove and cool completely on a wire rack.
