Instructions
1. Preheat oven
Preheat oven to 350°F (175°C). Grease or line a 9×5 inch loaf pan.
2. Make the cream cheese filling
In a bowl, beat cream cheese, sugar, egg yolk, and vanilla until smooth and creamy. Set aside.
3. Prepare the bread batter
- In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk egg, milk, oil, and vanilla.
- Combine wet and dry ingredients until just mixed.
- Gently fold in blueberries.
4. Assemble the bread
- Pour half the batter into the loaf pan.
- Spread the cream cheese mixture evenly on top.
- Add the remaining batter and gently spread.
5. Bake
Bake 50–60 minutes, or until a toothpick inserted into the bread part comes out clean.
If it browns too quickly, cover loosely with foil.
6. Cool and serve
Let cool 15–20 minutes before slicing.
