Blackberry Cobbler.

Posted on February 7, 2026 by Admin

Oh yes—Blackberry Cobbler 🍇✨—warm, sweet, juicy, with a buttery crust. Here’s a classic, foolproof version.

Blackberry Cobbler

Ingredients

For the filling:

  • 4 cups fresh or frozen blackberries
  • ¾ cup sugar (adjust if berries are tart)
  • 1 tbsp lemon juice
  • 2 tsp cornstarch (optional, for thicker filling)

For the topping (biscuit-style):

  • 1 cup all-purpose flour
  • ¼ cup sugar
  • 1½ tsp baking powder
  • ¼ tsp salt
  • ¼ cup cold butter, cut into small cubes
  • ⅓ cup milk (or heavy cream for richer topping)
  • Optional: ½ tsp vanilla

Instructions

  1. Prep the filling:
In a bowl, toss blackberries with sugar, lemon juice, and cornstarch. Pour into a greased 8×8-inch baking dish.
  2. Make the topping:
In a separate bowl, mix flour, sugar, baking powder, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in milk (and vanilla if using) to form a soft dough.
  3. Assemble:
Drop spoonfuls of the topping over the berries. It’s okay if some fruit peeks through.
  4. Bake:
Preheat oven to 375°F (190°C). Bake 35–40 minutes, until topping is golden and filling is bubbly.
  5. Serve:
Let cool slightly. Perfect with vanilla ice cream or whipped cream.

Tips & Tricks

  • Juicier filling: add a splash of orange juice or a tablespoon of liqueur.
  • Extra sweet topping: sprinkle sugar on top before baking.
  • Frozen berries: no need to thaw; add 5–10 extra minutes to bake.
  • Rustic look: don’t worry about spreading topping evenly—cobbler charm is in the uneven peaks!

I can also give a brown-butter, ultra-rich cobbler version that tastes bakery-level amazing if you want to elevate it.

Do you want me to do that?
