Beetroot

Here are a few delicious and easy beetroot recipes — from simple roasted beets to a hearty salad and a warm side dish.


🥗 1. Simple Roasted Beetroot

Ingredients

  • 4–5 medium beets, peeled and cubed
  • 2 Tbsp olive oil
  • Salt & black pepper
  • 1 tsp dried thyme (optional)

Steps

  1. Preheat oven to 400°F (200°C).
  2. Toss beet cubes with olive oil, salt, pepper, and thyme.
  3. Spread on a baking tray lined with foil.
  4. Roast 35–45 minutes, until tender and slightly caramelized.
  5. Serve warm or chilled.

Tip: Add a splash of balsamic vinegar before serving for extra flavor.


🥗 2. Beetroot & Feta Salad

Ingredients

  • 3–4 cooked beets, diced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped walnuts (toasted)
  • Mixed greens or arugula
  • 1 Tbsp olive oil
  • 1 Tbsp lemon juice
  • Salt & pepper

Steps

  1. Arrange greens on a plate.
  2. Top with diced beets, feta, and walnuts.
  3. Drizzle with olive oil and lemon juice.
  4. Season lightly and serve.

Optional: Add sliced red onion or orange segments for brightness.


🥣 3. Warm Garlic Butter Beetroot

Ingredients

  • 3 cups cooked, sliced beets
  • 2 Tbsp butter
  • 2 cloves garlic, minced
  • Salt & pepper
  • Fresh parsley (optional)

Steps

  1. Melt butter in a skillet over medium heat.
  2. Add garlic and cook 30 seconds.
  3. Add sliced beets and sauté 5–7 minutes.
  4. Season and garnish with parsley.

🥤 Bonus: Beetroot Smoothie (Healthy Option)

Blend:

  • 1 small cooked beet
  • 1 banana
  • 1/2 cup strawberries
  • 1 cup orange juice
  • Ice cubes

Blend until smooth.
