Here’s a hearty, flavorful Beef Tips recipe that’s perfect for serving over rice, mashed potatoes, or noodles.


🥩 Beef Tips in Gravy (Serves 4)

Ingredients

  • 1 lb beef sirloin or stew meat, cut into bite-sized pieces
  • 2 tbsp vegetable oil or butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • ½ cup red wine (optional, or use extra beef broth)
  • 2 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard (optional)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme or Italian seasoning
  • 2 tbsp all-purpose flour or cornstarch (for thickening)
  • 2 tbsp water (if using cornstarch)
  • Fresh parsley, chopped (for garnish)

Instructions

1️⃣ Sear the beef

  • Heat oil or butter in a large skillet over medium-high heat.
  • Add beef pieces and sear until browned on all sides. Remove and set aside.

2️⃣ Cook onions & garlic

  • In the same pan, sauté onions until softened, 3–4 minutes.
  • Add garlic and cook 30 seconds until fragrant.

3️⃣ Deglaze pan

  • Add red wine (if using) or a bit of beef broth, scraping up browned bits.

4️⃣ Simmer beef

  • Return beef to pan. Add beef broth, Worcestershire sauce, mustard, salt, pepper, and thyme.
  • Reduce heat, cover, and simmer 30–40 minutes until beef is tender.

5️⃣ Thicken gravy

  • Mix flour with 2 tbsp water to make a slurry (if using cornstarch, same).
  • Stir into simmering pan and cook 2–3 minutes until gravy thickens.

6️⃣ Serve

  • Garnish with fresh parsley. Serve over rice, mashed potatoes, or egg noodles.

🔥 Tips

  • For extra flavor, add mushrooms or bell peppers while sautéing onions.
  • Slow-cooker variation: Sear beef, then combine all ingredients in a slow cooker and cook 6–8 hours on low.
  • Make it creamy: Stir in ¼ cup sour cream at the end.
