Here’s a hearty Beef Stew with Rice and Guacamole recipe—a comforting, well-rounded meal with a Mexican-inspired twist:


Ingredients (Serves 4)

For the Beef Stew:

  • 1 lb beef chuck, cut into 1-inch cubes
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 red bell pepper, chopped
  • 2 cups beef broth
  • 1 can (14 oz) diced tomatoes
  • 2 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp chili powder (optional, for mild heat)
  • Salt and pepper to taste
  • 2 tbsp fresh cilantro, chopped (optional)

For the Rice:

  • 1 cup long-grain white rice
  • 2 cups water or broth
  • ½ tsp salt

For the Guacamole:

  • 2 ripe avocados
  • 1 small tomato, finely chopped
  • ¼ small onion, finely chopped
  • 1 clove garlic, minced
  • 1 tbsp lime juice
  • Salt and pepper to taste
  • Optional: chopped cilantro or jalapeño for extra flavor

Instructions

1. Make the Beef Stew

  1. Heat oil in a large pot over medium-high heat. Brown beef cubes on all sides, then remove and set aside.
  2. In the same pot, sauté onion, garlic, carrots, celery, and bell pepper for 5 minutes.
  3. Return beef to the pot. Add diced tomatoes, beef broth, paprika, cumin, chili powder, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer, covered, for 1–1.5 hours until beef is tender.
  5. Stir in chopped cilantro just before serving.

2. Cook the Rice

  1. Rinse rice under cold water.
  2. In a saucepan, combine rice, water/broth, and salt. Bring to a boil.
  3. Cover and reduce heat to low. Cook 15–18 minutes until rice is tender.

3. Make the Guacamole

  1. Mash avocados in a bowl.
  2. Mix in tomato, onion, garlic, lime juice, salt, and pepper.
  3. Optional: add cilantro or jalapeño for extra flavor.

4. Serve

  • Plate a scoop of rice, ladle beef stew on top or to the side, and serve with a dollop of guacamole.
  • Garnish with extra cilantro or lime wedges if desired.

This meal balances savory, hearty stew with fresh, creamy guacamole and a simple base of rice—it’s comforting but bright.
