Baked potatoes and sausage

Simple, hearty, and cozy—baked potatoes and sausage is a total win 🥔🌭
Here’s an easy one-pan oven version with crispy edges and tons of flavor.


Ingredients (serves 4)

  • 4 large russet potatoes, scrubbed and cubed
  • 1 lb smoked sausage or kielbasa, sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: 1 bell pepper or onion, sliced

Instructions

  1. Preheat oven
    Set oven to 400°F (205°C).
  2. Season
    In a large bowl, toss potatoes with olive oil, garlic powder, paprika, onion powder, salt, and pepper.
  3. Bake potatoes first
    Spread potatoes on a baking sheet in a single layer.
    Bake 25 minutes, flipping once.
  4. Add sausage
    Add sliced sausage (and peppers/onions if using).
    Toss gently and return to oven for 20–25 minutes, until potatoes are tender and sausage is browned.
  5. Serve
    Serve hot with sour cream, shredded cheese, or mustard on the side.

Easy Variations

  • Cheesy version: Sprinkle shredded cheddar over everything in the last 5 minutes.
  • Garlic herb: Add fresh rosemary or thyme before baking.
  • Spicy: Use andouille sausage or add red pepper flakes.
  • Foil-packet version: Great for grilling or camping.
