Baked potato with sausage and cheese

🥔🧀 Baked Potato with Sausage & Cheese

  • Bake: 50–60 min

🛒 Ingredients

  • 4 large russet potatoes
  • 12 oz sausage (smoked sausage, kielbasa, or breakfast sausage)
  • 1½ cups shredded cheese (cheddar, Colby-Jack, or pepper jack)
  • 2 tbsp olive oil or butter
  • Salt & pepper
  • Optional toppings: sour cream, green onions, bacon bits, hot sauce

🔥 Instructions

  1. Preheat oven to 400°F (205°C).
  2. Scrub potatoes, pat dry, poke each a few times with a fork.
  3. Rub with olive oil, sprinkle with salt.
  4. Bake directly on oven rack (or on a sheet) for 50–60 minutes, until fork-tender.
  5. Meanwhile, slice sausage and brown it in a skillet over medium heat until heated through and lightly crispy.
  6. When potatoes are done, slice them open and fluff the insides with a fork.
  7. Add butter (if using), then top with sausage and shredded cheese.
  8. Return to oven 5–10 minutes until cheese is melted.
  9. Finish with your favorite toppings and serve hot.

  • Loaded version: Add sautéed onions & peppers.
  • Spicy: Use andouille + pepper jack + drizzle of hot sauce.
  • Breakfast style: Breakfast sausage + scrambled eggs + cheddar.
  • Air fryer shortcut: Bake potatoes in air fryer at 400°F for ~40 min.
